Il locale è il risultato di un attento recupero di una vecchia stalla la cui epoca risale ai primi anni del ‘600, costruita in archi di pietra e l’arredamento, compresa la pavimentazione, tutta eseguita con autentico legno di vecchi larici o pino cembro, sono opera del maestro Giacomo Para, detto Giaculin.
La nostra cucina è improntata quasi esclusivamente sulle tradizioni piemontesi con l’impiego di prodotti locali
sfruttando anche le verdure e le erbe spontanee che si trovano a portata di mano nei dintorni del locale.
Richiestissima la “zuppa di Chianale”, il baccalà ai porri con polenta e il cinghiale con polenta.
I formaggi prodotti assolutamente con latte di valle variano dai nostrali di mucca e di capra ai miscelati caprini, ovini e vaccini. Le carni provengono esclusivamente da vitelle piemontesi allevate nella pianura cuneese, nostre specialità:
tagliate e costate alla piastra oltre alla “battuta al coltello”.

The name The name Chianale, originally La Cianal, which in Langue d’Oc means “conduit” refers to a canal of the Varaita River which ran through the town. Others say that La Cianal in the past referred to the source of the river.

ALPINE ARCHITECTURE IN LANGUE D’OC The high side of the Varaita Valley ends at Pontechianale (m. 1620 a.s.l.) with its pine wood and forest surrounded lake.
Continuing up to 1800 m. you will get to the stone village of Chianale, the structure of the village is centered on the axis of the ancient Chemin Royal road, the salt route which joined Italy with France.
Carrying on from Chianale up to 2748 m. (it is only possible to do this by car during the summer) you get to the mountain-pass of the Hill of Agnello where it is possible to get to the Queiras district.
The river Varaita divides Chianale into two zones linked by a stone bridge, considered the heart of the village.
The bridge gives onto a square with a fountain where you will find the ancient Church of S. Antonio. Built in the XIV century it was the parish church of Chianale from 1459 up until the end of the XVII century.
This very simple and harmonious church with a bell-tower including a sailed mullioned (vertically divided) window is completed by a small-porch at the entrance and a triple arched lintel Romanesque Portal.
Inside there is a barrel vault with transversal arches supported by corbels carved with masks and têtes coupées which refers to the archaic Celtic substratum.
At civic no. 17, central axis of the village, on the Chemin Royal, is Casa Martinet, it is what remains of a Calvinist Temple. In fact Chianale was for most of the XVI century until the repeal of the Edict of Nantes the only place in the valley in which freedom of religion was permitted.
On the façade of Casa Martinet there is a mullioned window decorated with its French coat-of-arms and that of the Dauphine.
On the other side of the bridge, there is the more recent Parish church of S. Lorenzo, built between the XVII and XVIII century, in which is preserved a baroque of Briançon altar from 1726 that rests on four solid carved pine columns.
Even though the architectural inheritance of the Alpine valleys is often considered poor , it is easy to find masterpieces of peasant culture in the Varaita valley, hidden in the villages and in the most inaccessible places: houses built in very original ways with stages and doors placed in order to face the severity of its climate.
Anf finally, the beautiful tiled roofs which give the village a very suggestive image when seen from above.
Local Products In the past the valley was famous, as was La Cianal, for its honey and for its wooden handcrafts; nowadays it still produces very good Alpine cheese.
